Overnight oatmeal with strawberries, blueberries and hazelnuts

This breakfast or brunch treat will literally cook itself. You'll just need to mix a few ingredients in a jar, cup or bowl and leave it in the fridge overnight. In the morning, you'll have a delicious and healthy breakfast ready.

Absolutely no cooking is necessary, but you can easily warm it up for a porridge-like dish.

This recipe is designed to be flexible. You can easily experiment with it by adding ingredients to your taste, but here's what this version contains:

Main ingredients:
- 50g oat kernels 
- a handful of blueberries and strawberries
- 50g granola
- 50-80ml of vegetable milk (oat, almond or other optional)
- skerry/Greek yoghurt
- coconut chips 
- hazelnuts

Preparation:
1. Boil the oats, coconut flakes and milk for 5-8 minutes in a small pot until the nuts swell and absorb some of the milk. This mixture is set aside to cool.
2. When the mixture cools, layer strawberries, layer oatmeal/ granola/ skerries/ layer blueberries in a small cup/ bowl/ jar.
3. Leave it in the fridge and after an hour or two or in the morning you can enjoy it.

🫐 They are high in antioxidants like anthocyanins, which can protect your cells from free radicals.
🫐 They can improve blood sugar and insulin response when eaten with high carbohydrate foods or included in smoothies.

- Proteins
- Useful fats

Oats themselves do not contain gluten, but very often during production so-called 'cross contamination' can occur, where oat bran turns into gluten containing oats.

When purchasing oatmeal, simply read the packaging carefully, where it should explicitly state "GLUTEN FREE".
