INGREDIENTS
- 2 cups Medjool dates, pitted
- 1 cup walnuts
- 1/2 cup almonds
- 1/2 cup shredded coconut
- Pinch of salt
- 1/2 cup mixed seeds (like sunflower and pumpkin)
METHOD OF PREPARATION
- In a food processor add the walnuts, almonds and coconut. Grind for 10 seconds.
- Add the seeds and dates. Grind for 20 seconds. Repeat this 2-3 times until the dates are crushed and mixed with the remaining dried fruit mixture.
- Lay baking paper in a baking dish or on a flat plate.
- Pour the mixture into the tray and level it with a spatula.
- Place in the refrigerator until firm.
