INGREDIENTS

  • 2 cups Medjool dates, pitted
  • 1 cup walnuts
  • 1/2 cup almonds
  • 1/2 cup shredded coconut
  • Pinch of salt
  • 1/2 cup mixed seeds (like sunflower and pumpkin)


METHOD OF PREPARATION

  • In a food processor add the walnuts, almonds and coconut. Grind for 10 seconds.
  • Add the seeds and dates. Grind for 20 seconds. Repeat this 2-3 times until the dates are crushed and mixed with the remaining dried fruit mixture.
  • Lay baking paper in a baking dish or on a flat plate.
  • Pour the mixture into the tray and level it with a spatula.
  • Place in the refrigerator until firm.
  • Cut into desired shape and serve.

Note: Store the bars in a tightly closed container at room temperature for up to one week or in the refrigerator for up to two weeks.
