INGREDIENTS

About the chicken:

  • 500 g chicken breasts
  • 2 medium courgettes (about 400 g)
  • 10 g fresh ginger, finely chopped or grated
  • 2 cloves of garlic
  • 1 tsp red chilli powder
  • 80 ml soya sauce
  • 30 ml red wine
  • 80 ml cooking cream
  • 1 tsp sugar
  • Salt, if required
  • Black pepper to taste

    To serve:
  • 300 g cooked rice

METHOD OF PREPARATION

Prepare the ingredients:

Cut the chicken breasts into bite-sized pieces. Wash the courgettes and cut them into small cubes. Peel and grate the ginger, and finely chop or crush the garlic.

    Prepare the chicken:

    Heat a large non-stick frying pan over a medium-high heat.

    Add the garlic, ginger and chilli and stir briefly until their flavours are released.

    Add the chopped courgettes and cook for a few minutes until they start to soften slightly.

    Add the chicken and cook, stirring occasionally, until it is golden brown on the outside and cooked through.

    Transfer the sauce to a frying pan or small saucepan and heat it over a moderate heat.

    Prepare the sauce:

    Add the red wine and leave for 1–2 minutes to reduce slightly.

    Next, add the soya sauce and the sugar. Stir well and reduce the heat.

    Finally, add the cream and leave the dish to simmer for a few more minutes, until the sauce thickens slightly and coats the chicken and courgettes evenly.

    Try it before adding salt – soya sauce already contains a significant amount of sodium.

    Serving:

    Divide the cooked rice between three plates and serve the chicken with the courgettes on top.

    If you like, finish with a little fresh spring onion, sesame seeds or some extra grated ginger.

    USEFUL TIPS

    Do not add salt at the start of the cooking process. Soy sauce is salty, and in many cases you won’t need any extra salt at all.

    Don’t cook the courgettes for too long; their slightly firm texture works much better in the creamy sauce.

    If you want to increase the fibre content, you can replace white rice with brown rice or add an extra portion of vegetables to the dish.

    For a lighter sauce, you can use cooking cream with a lower fat content. Bear in mind that this will alter both the texture and the nutritional values.
