Spinach soup with rice and bulgur

Spinach soup is one of those dishes that bring a sense of home and tradition to Bulgarian cuisine. Prepared for generations, it combines the simplicity of seasonal products with a rich, fresh taste. In the past, this soup was particularly popular in rural areas, where people relied on what nature offered in different seasons. Spinach, as one of the first green crops to appear after winter, naturally finds its place on the table.

In spring, when the markets are filled with fresh greens, spinach soup becomes a symbol of new beginnings and the rebirth of nature. Light but nutritious, it is a popular choice for both weekday menus and more special occasions. In different parts of Bulgaria, the recipe has its slight variations, with rice, with egg and yoghurt or simply with a little garlic for flavour, but the base remains the same: fresh spinach and homeliness in every spoonful.

This version of the soup is my personal interpretation, combining rice and bulgur for a richer texture and flavor. The traditional yogurt and egg filling is not done here. However, if you like the slight acidity and creaminess, you can always add a spoonful of yogurt when serving!

INGREDIENTS

  • 250g spinach (cleaned and chopped)
  • 1 onion (chopped)
  • 2 medium carrots (chopped)
  • 60g rice
  • 60g bulgur (medium)
  • 4 tablespoons canned tomatoes (chopped)
  • 1 tbsp olive oil
  • 1 tsp red pepper
  • 2-3 bay leaves
  • 1.2l water (approximately)
  • salt and pepper to taste
  • yoghurt and parsley for serving

METHOD OF PREPARATION

  1. Fry the onions and carrots in the olive oil in a deep saucepan.
  2. When the onion becomes transparent, add the spinach and cook until soft.
  3. Add salt, pepper, paprika, tomatoes, washed rice and bulgur, and water.
  4. Cook until rice and bulgur are ready (about 25 minutes)
  5. Serve with a spoonful of yoghurt and chopped parsley.
