Chicken fajitas

INGREDIENTS

  • 3 chicken breasts
  • 1 large onion, thinly sliced
  • 1/2 lime
  • 3 peppers, sliced thinly
  • 3 tablespoons olive oil

SPICES FOR FAJITAS

  • 1 tsp chilli
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp oregano

  • Tortillas (for serving)


METHOD OF PREPARATION

  • Combine all the spices in a small bowl and mix well. Cut the chicken breasts into strips and roll them in the spices.
  • Heat 1 tablespoon olive oil over medium-high heat. Add half of the chicken and cook 3-5 minutes until done. Remove from pan and set aside. Repeat the same with the remaining chicken.
  • Add another 1 tablespoon olive oil to the pan. Fry the onions for 2 minutes, then add the chopped peppers and cook for another 2 minutes. Return the chicken to the pan and mix well.
  • Add freshly squeezed lime juice and serve immediately with tortillas.

Note: Store in refrigerator up to 3 days or in freezer in tightly closed container up to 3 months.
