INGREDIENTS
- 3 chicken breasts
- 1 large onion, thinly sliced
- 1/2 lime
- 3 peppers, sliced thinly
- 3 tablespoons olive oil
SPICES FOR FAJITAS
- 1 tsp chilli
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/2 tsp oregano
- Tortillas (for serving)
METHOD OF PREPARATION
- Combine all the spices in a small bowl and mix well. Cut the chicken breasts into strips and roll them in the spices.
- Heat 1 tablespoon olive oil over medium-high heat. Add half of the chicken and cook 3-5 minutes until done. Remove from pan and set aside. Repeat the same with the remaining chicken.
- Add another 1 tablespoon olive oil to the pan. Fry the onions for 2 minutes, then add the chopped peppers and cook for another 2 minutes. Return the chicken to the pan and mix well.
- Add freshly squeezed lime juice and serve immediately with tortillas.
Note: Store in refrigerator up to 3 days or in freezer in tightly closed container up to 3 months.
