Protein Muffins Banitsa

For me, Bulgarian banitsa has always been a symbol of the weekend, of family warmth and of those lazy Sunday mornings when the whole house smells of roast. As a child, I adored my grandmother's banitsa, but over the years I started to notice how after such a meal I get heavy, I get sleepy and my energy plummets because of too much fat. Since I didn't want to give up this favourite taste, I decided to look for a way to turn it into something lighter and suitable for my dynamic daily life, without losing the magic of tradition.

Thus were born these patties in muffin tins. They are the perfect, lighter, high protein alternative to everyone's favorite Grandma's pie. They've become my salvation for busy weeknights because they're ready in no time, extremely convenient to eat on the go, and give you just that home-cooked feeling we need in the morning.

🥗 PORTIONS: 12 |⏳ PREPARATION TIME: 70 minutes

INGREDIENTS

  • 8 medium eggs
  • 300g cottage cheese (low fat)
  • 4 tbsp yoghurt (low fat)
  • 300g pie crust (filo pastry sheets)
  • 200g white salted cheese
  • 1 tsp bicarbonate of soda
  • 1 tsp olive oil (to grease the moulds)
  • salt to taste

METHOD OF PREPARATION

  1. Cut the pie crusts into pieces and add the crumbled white salted cheese and the cotija cheese.
  2. In a separate bowl, whisk the eggs with the yogurt and salt.
  3. Add the soda to this mixture.
  4. Add the mixture to the crusts and cheese and mix well.
  5. Grease 12 muffin tins.
  6. Divide the mixture equally between the moulds.
  7. Bake at 180 degrees (without fan) for 45-50 minutes or until the muffins are fully baked.
  8. Serve with yogurt and enjoy!
